1 cup flour
1/4 tsp baking soda
1 cup coconut or crushed cornflakes
1 cup rolled oats
1/2 cup applesauce or margarine (or 1/4 cup of each)
1/2 cup brown sugar
1/4 cup water
splash of vanilla
Just blend wet and dry ingredients together, don't over stir. Use a small cookie scoop or drop by tbsp on a sprayed cookie sheet. Bake at 350 for 6-8 minutes.
2 cookies is a serving.

*you can add nuts or craisins or whatever dried fruit you like to these but make sure you make one batch without so you can see the consistency first. You may need to add more water if you add other stuff to the batter.
 
I made them today; omitted the water and used up all of the applesce in the jar; added some craisins and choc chips. Took triple the amount of time to bake !
 
What would make them UNhealthy?

Having said that, I have never suggested this was a healthy breakfast alternative. It is a much better alternative than nothing at all, or several types of cereals. You will have to decide for yourself.
 
was just cleaning out the recipe box and rediscovered these. of the dozens and dozens of healthy recipes i hve at home, for muffins and such, from spark people and other sites, this is my absiolute fave !!
