A friend of me that have a autistic son on GFCF (gluten/casein free diet) are going on holiday and she is wondering on how it is best to bring with here bread.

Can she vacuum pack the bread?
Does it taste good or is it dry?

Even vacuum packed, at normal temperatures, the most you can hope for is four days before risking the growth of mold. Lowering the temperature is the best way of extending the life of bread.

most gluten free bread you buy in the store is long life.

once you open the bag , wrap it in plastic or zip lock bags. (and freeze it)
