Dried Beef Chowder

1 cup finely chopped onion
1/4 cup butter
1/4 cup flour
4 cups milk
1 can (16 oz) whole potatoes, diced
or 1 3/4 cup fresh potatoes, peeled, diced and cooked
1 jar (5 oz) dried beef, blanched and chopped
1 tablespoon chopped parsley

Blanch beef by briefly rinsing it in very hot or boiling water. Cook onion in butter until tender. Stir in flour. Stir in milk and slowly add potatoes and beef. Heat, covered, over low heat for 30 minutes, stirring occasionally. Top with chopped parsley.

Looks like a good camping recipe! One could probably use canned milk, too!

Good idea, Wyogirl. It would be handy when you're snowed in, too.

is dried beef the same as jerky? sounds like it

saw alton brown make a jerky stew once, which was a broth base (from the jerky) instead of milk...guess thats why this one is a chowder

nope, dried beef comes in jars, more like a slice of sandwich meat. Jerky usually is a bit spicier, and some jerky is made from ground meat, so it could fall apart... just a guess.

gotcha.....thanks!

also, any jerky of decent quality is made from solid cuts of meat....generally sliced thin, marinated, then smoked/dried....i actually dont think ive ever seen jerky made from ground meat...."meat snacks" on the other hand are another story....

My husband made some for the first time this summer, got a dehydrator for a backpacking trip. He made it from ground beef. It was pretty good.
