ISO recipe ideas while Sailing in Mexico

I'm looking for recipe ideas, keeping in mind the ingredients should be obtainable in Mexico and easy to provision for a 2 week sailing trip out of LaPaz, Mexico. I plan to do some fishing myself, but imagine mostly "main ingredients" will be seafood from local ports.
