These pasta dishes are rustic and simple and all are delicious. The key is simplicity itself. A pasta, olive oil and a couple of garlic cloves and an ounce of Parmigiano Reggiano or Pecorino Romano, Dry Asiago (the actual cheeses not something pre-grated in a box!) grated into a sauce like concoction makes the day! Additions can be a few leaves of basil or Italian parsley or 1/2 cup of Ricotta cheese thinned with a 1/2 cup of the pasta water after the pasta is cooked. Any type of pasta will do. Boiled al dente and the sauce ingredients folded in gently.
