TNT Stuffed Tomatoes

A friend gave my Dh a bag of tomatoes sooo.I love tomatoes but in the summer, to me these would not have much flavor so I decided to make something hot with them..
I set my oven to 35o and then sliced the tops off the 4 large tomatoes, I scooped out the pulp and saved it. Put the tomatoes upside down and let drain. I fried 8 slices bacon til crisp and saved about 2 Tab. of the grease. Then crumbled the bacon .Saute about 1 med. chopped onion and the tomatoe pulp in the reserved grease to reduce most of the liquid. Remove from the heat, and add 1-2 Tab. chopped parsley,1 Tab. chopped fresh basil, salt and pepper to taste,crumbled bacon and 4 oz. of shredded Monterey Jack cheese, mix well,stuff the tomatoes and Bake uncovered for 20 Min don't over bake they tend to fall apart..Serve hot sprinkled with some fresh chopped parsley..
