i make my own italian sauage with fennel seed, salt, pepper, garlic powder, and a dash of pepper flakes and it seems to come out pretty good. just wondering if theres anything i can add to make it better or if there is a good recipe that you know of.

i like to know how to make my own sausage because i like to use ground turkey alot.

i would also like to make portuguese sausage/linguisa but have no clue where to begin. any help would be appreciated.
 
yes i agree silva is great stuff, its made right here in san jose

I think is Heavy on Smoked Paprika.

Here we call it Chorizo... it is very Red in color..
