If you do try the caramel, Alix, just make sure it is creamy and after baking won't go too hard or it will be difficult to cut and eat (been there done that!). I use my caramel sauce recipe making a sugar syrup and letting it go until just amber, then adding heavy cream (keep pot off heat and away from you as you add it and stir well as it will sputter and separate). After it is combined I add a little knob of butter for shine. Works great on ice cream and other things too!
