Had to retire the old sab and got my new CS sab Chef's knife, but had to use a Stainless Steel knife for a week while I was waiting for the new one to arrive.

Back to real sharpness. :)
 
Which "brand" of Sab did you get? Aren't there four or more companies currently using the name? BTW, my favorite carbons are my Hiromoto AS and the Moritaka AS...both very nice.:cool:
 
Lion, was trying to get a Aine & Perrier ('K') but they don't have a local supplier.

There are about 8 true "Sabatier" brands about 'K', Thiers-Issard aka 4 star elephant, Diamant, and Lion being the best ones.
