Hey i am making pork jerky in a true north smoker with maple wood chips. but it has been in there for about 10 hrs and it is only jerky like on the very outside and underneith it is raw, like still has a heartbeat raw. and is not very flavorful. it just tastes like raw pork. anytime my dad used this smoker he made it like shoe leather in alot less time. (thats how he likes the jerky, yuck) if anybody has any ideas what went wrong i would really appreciate it
 
What's the temperature inside the smoker? Sounds like it's too cold.

Did you marinate/salt your jerky before putting it on the smoker?
