Almond Citrus Salad

This salad is good with raw spinich, arugula, friese or a combination of them. I have also used them together and with watercress.

ALMOND CITRUS SALAD

1/3 cup orange juice
2 Tbs white wine vinegar
2 Tbs vegetable oil
1 Tbs honey
2 tsp grated fresh ginger
1/4 tsp salt (I leave out the salt, IMHO it does not need it)
1/8 tsp red pepper flakes
2 grapefruits, peeled and segmented
2 naval oranges, peeled and sliced
1/4 cup finely chopped red onion
6 cups bitter greens of choice
1/3 cup roasted slivered almonds

Combine juice vinegar, oil, honey, ginger, salt and pepper flakes in a blender or jar. Blend thoroughly.

In a bowl combine fruit, onion and dressing. Set aside for at least 10 minutes of up to 1 hour. To serve, line four individual plates with the greens, spoon fruit mixture with dressing over each. Sprinkle with almonds. Makes 4 servings.
