Just found this forum today, I have been looking for a place to discuss cooking. By the name of the forum I think I've found the right place! 
My name is Josh. I have been a Sous Chef for an Italian Restaurant and Catering Business for 5 years. I was trained by my uncle who owns the business. He went to school for cooking and has been up and down the east coast and cooked at many prestigious establishments.
I am also starting a new blog which if anyone is interested in reading it I'd love to get comments. I will be posting my first recipe to it today.
