How long can a thawed beef flank stay good in the fridge?

depence on how cold your fridge is. Could be anywhere from couple -three day to a couple of weeks. In my bottom shelf the temps are near freezing, meat stayd good there for a very long time.

There is no way to know from your information. If you bought it at a typical grocery store, then it had a sell by date on it. When you froze it, you had X number of days left before that date; it could be 1 or it could be 7. I would generally use meat with 2 days of the sell by (less for poultry and fish). So it likely be "good" once thawed anywhere from 3 to 9 days.

In reality, cooking will kill the pathogenic bacteria present, if any, and toxins are not produced at 40 degree temperatures, so your eyes and nose are your best way to tell when it is no longer good.
