I heard red new potatoes make them nice and firm. So if you want softer use russet?? Not sure has anyone Experimented with this?

i always use russet type potatoes, never redskin or new potatoes, for my gnocchi. i like gnocchi that is light and soft, rather than heavy. heavy is what you get by using too much flour. i don't know for sure, but suspect that using waxy new potatoes may contribute to that effect....
