A hearty soup great for those cold Winter days. In a 5-St. dutch oven cook 1-1/2 lbs. Mild Italian sausage cut in slices over med. heat til lightly brown. About 7-10 min. Remove the sausage with sloted spoon to a dish. Drain all but 3 Tab. of the fat from the dutch oven. Add 2 cloves minced garlic, and 2 yellow onions chopped to the dutch oven. Saute til transparent Add the sausage back in cook for about 2-3 min stirring constantly. Add tomatoes 2 lbs peeled and cored. stirring to break them apart., 5 cups of beef stock 1-1/2 cups red wine 1/2 teas. each of dry oregano and basil now simmer uncovered for 30 min. skim off excess fat then add 3 Tab. fresh chopped parsley 1 med red pepper chopped 2 sliced med. zucchini and 2 cups bow tie noodles simmer covered til noodles are aldente about 25 min. Serve in deep bowl and pass a bowl of fresh grated Parmesan some fresh hot Italian or French bread and butter and a fresh green arugula salad is all you need.
