I have read various reputed sources (USDA & University) that I can and/or cannot can pecans in this manner.

This are canned from last fall. I opened the jars and there were no adverse reactions, discolorations, odors, or molds.

Since I have added alcohol, would this be okay? Thoughts?

Welcome to DC! I would think they'd be fine, especially with the alcohol. Honey also acts as a natural disinfectant. You might want to call your local extension agency to be sure.

They sound delicious!

Without a recipe, there is really no way to tell. Pecans are low acid, peaches have enough acid to waterbath.

And just because they look and smell ok doesn't mean anything--botulism is tasteless and odorless.
