I bought some beef from a "doubious" source..

it is "tough as nails".. now what?

I think it is Top Round.. I tried stir fry.. and very Rare steak like London broiled.. in-edible..

other than make it into jerkey (which I like)..

I'm thinking ..chop into chili or stew meat?

Sloppy Joes?

or put into my Slow Cooker.. which seams to make any meat into Super Tender..

Thanks, Eric, Austin Tx.

When you have tough meat like this, a long slow cooking process should be used. Stewing and braising are good choices. Allow the meat to cook at a lower temperature, after searing on the stove top, Just barley covered in liquid low and long until fork tender. You may oven roast at 250 until you can pull apart with fork. Make sure pot is covered. Add Veg, sauce, and Herbs as desired.
