white Cajun pasta sauce recipe

Here is a recipe for what they call White Cajun Alfredo Sauce:

Now prepare the Cajun Alfredo Sauce. Preheat a saute pan, then add cream, salt, black pepper and garlic. Bring to a slow boil. Once it starts reducing add white wine and cayenne pepper.

But part of the flavor I'm sure comes from the seafood that goes in it. I've never had it - does it have andouille sausage in it? That will flavor it A LOT. Below are the exact measurements for this sauce. Doesn't have enough garlic IMHO - needs about 3 big cloves chopped up - maybe even more.

1 teaspoon salt
1 teaspoon black pepper
1 teaspoon minced fresh garlic
1 cup white wine
2 tablespoons extra virgin olive oil
2 1/2 cups heavy cream
2 teaspoons cayenne pepper
8 ounces angel hair pasta
 
It seems that I added my Cajun seasoning to the Alfredo sauce at the wrong time, last. It left a gritty texture. What would be your suggestion on how to get rid of this.
