Missing One Ingredient

Hi everyone ! Thanks for such a warm welcome. I am from Ontario in Canada. Cooked for a dinner party today...I am not sure why, but no matter HOW organized I am and how much work I do to make sure everything is perfect I always seem to miss packing ONE ingredient. Geeze! What the heck?
Got a theory on this one?
I either have to wing it (if possible)or substitute something or take a hike to the nearest store).... ...
I am hoping my clients will enjoy the fare,,,,,,now, time to put my feet up.
Cooking as a profession is hard work, but I LOVE IT.

Hi Gusto, I am waving to you from the West Coast! I hear you one the "missing something" and on the "hard work but love it"! I miss my catering but it is also nice to just walk in, set down the cake and walk out again!
