Tomato and sweet pepper salad...TNT

Take 6 juicy ripe tomatoes, peel and seed them then dice. 3 sweet green peppers, roast,stick in a bag then after you peel them dice I intend to use Cuebelle peppers this time so no need to roast, just seed and dice or fry them in evoo and add to the salad. These peppers are great tasting especially after frying. Place the tomatoes,peppers,2 Tab. fresh lemon juice, salt to taste, ground cumin maybe about a half tea. some fresh ground pepper 1 clove finely chopped garlic or crush it. Toss everything to mix Add 3 Ta. evoo, 3 Tab. Flat leaf parsley and either 1 small Jalapeno seeded ribbed, and finely diced or a pinch of Cayenne if you want. You can also add 1/4 of a preserved lemon if you want rinse the preserved lemon then finely dice the zest. toss the salad once more, serve at room temp.

It is a wonderful thing to grow your own tomatoes and peppers and lettuces. The herbs are a wonderful addition to any salad you plan to make.

We used to grow our own tomatoes, they were ever so juicy, nothing like the shop ones
