Pecan Cream Cheese Pie

PECAN CREAM CHEESE PIE


6 oz. cream cheese
1 t vanilla
1/4 cup sugar
1/4 t salt
1 egg

Beat together until thick and smooth. Reserve.

2 eggs
2 T sugar
3/4 cup corn syrup (light or dark)
1 t vanilla

Beat eggs until whites and yolks are just combined. Add syrup, sugar, vanilla, and beat gently until blended.

1 unbaked 9" pie crust
1 1/4 c chopped pecans

Spread cheese mixture into crust. Sprinkle with pecans. Gently pour syrup mixture over pecans. Bake at 375°F 35-40 minutes until center is firm to touch. Place on cookie sheet to catch leaks.
