I have a bit of sage from my garden. Is it better to dry it or to freeze it? Which will leave more flavour? If I dry it, should I hang it to dry or dehydrate it using the dehydrate setting of my toaster oven?

I dry sage by putting it in a dry vase for a few days. I've never tried freezing sage, so I can't compare, but I usually dry woody herbs and freeze soft ones.

I dry mine, tie it in small bundles with either thread or a rubber band, and hang it from my herb dryer thingy. It air dries so well I don't bother with the dehydrator, and the flavor lasts for years. I would opt for drying over freezing sage.

You can do both. Drying it changes the flavour, it tastes almost like a whole other herb when dried. Freezing preserves the fresh flavour.

I'll try freezing some another time. I'm not really sure what it tastes like fresh. I use sage mostly when making breakfast sausage.
