We are all busy getting ready for Thanksgiving, but wouldnt this be good as an appy or the next days dinner, just ready the veggies make or by some pie crusts and you're set to go.
Okay Preheat your oven to 350then make our filling place the veggies on a large baking tray you will need 1 head of unskinned garlic cut the long way,2 onions quartered,2 red bells quartered,2 small eggplants cut into wedges,4 romas, cut in halves,3 zucchini,quartered,drizzle the veggis with 2 Tab evoo bake 1 houror til veggies are golden and rather dry. Cool , then squeeze the flesh from the garlic skins and set aside. Get the pastrey set on lightly floured surface and round it out. Place it on a baking try rub top with the garlic and top that with your veggies add some Fetta about 6-7 oz. and sprinkle with some marjoram about 2 Tab. more if you like. fold up the edges of the pastry to make a raised edge.chill for 20-25 min. Then bake for45 min, serve warm or cold with a nicesinole leaf salad.
