The Taste.. One spoon, one bite What would YOU MAKE?

The new show The Taste has cooks preparing one bite
of food for 4 judges, who taste it without knowing who
prepared it. They then either pick that person to be
on their cooking team, or not, still without knowing
who the cook is.

So what would you make as your one taste?
 
That is an excellent question!

Well, they may not think it's all that fab, but this is how I cook, so I'd put this:

Perhaps a small slice of medium rare Filet Mignon with a smoked salt/ground pepper/rosemary/thyme rub, a square of buttered, grilled artichoke heart, topped with a dab of crispy sautee of green onion bulbs & fingerling potato.
 
I was thinking steak, too. Something very tender with hints of other things.
 
I would probably do a crab, shrimp, scallop saute with a wine mushroom sauce topped with scallions.

I asked DH what he would do and he said bacon and gravy :neutral::LOL:

The seafood saute or the bacon gravy :LOL:
 
A nicely seared scallop, topped with a mix of fluffy beaten cream cheese and minced scallions, with a fine tiny egg black caviar interspersed, and a teaspoon of the caviar dolloped on top.

I would probably make something like a thin slice of peppered beef tenderloin (rare) with brandy flamed chicken liver and a dollop of creamy wild mushroom sauce, with a few thin strips of crispy fried onion.
