Shrimp and Mango Salad
1/4 cup mayonnaise
2 tablespoons prepared horseradish
1 tablespoon white vinegar
1/8 teaspoon pepper
3/4 pound shrimp, cooked and peeled
1 cup cubed peeled mango
3/4 cup cooked rice
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
Combine first 4 ingredients in a medium bowl; stir well with a whisk. Add shrimp and remaining ingredients; toss gently to coat.
