Substitutes for sugar?

Has anyone tried substituting stevia, honey, or maple syrup for sugar in cookie recipes? I'm sensitive to white sugar and am looking for alternatives. I have a recipe for peanut butter cookies that calls for 1 cup of sugar, and I'd like to try a lower glycemic substitute.

On the other hand - if you are sensitive to white sugar would unrefined brown cane sugar work for you?

Yet another hand - A friend of mine is OK with cane sugar but can't cope with beet sugar.
