Easy pan sauces

Sure. I saute fresh shrimp in garlic and olive oil,I remove shrimp and turn up the heat. Scrapping the pan I add the vodka. I use 2 oz's. As the alcohol burns off I add a tab of butter and some infused olive oil. Ad your shrimp back into the mix and serve. I usually have some shrimp stock on hand and add a little too.

I also love pan sauces, I just did one the other day for fillet of beef. Cooked meat MR, removed from heat, tented and resting, added mushrooms, garlic and shallots, cooked till shrooms browned up, added veggie soup base and water, reduced briefly, added drippings from rested meat, spooned sauce over meat. Fast, very tasty, and nearly fat free!
