Oil for Apple Fritters

I want to make apple fritters and looking for advice on the
type of oil to deep fry them in.
I can't get anything solid like crisco or lard so I need to use a liquid.
Really my only choices are vegetable, palm and canola.

That sounds nice. Should the banana be on the ripe side
but not too soft?

I have had them made a couple of different ways. If you use a ripe banana I would mash it and add it to the batter to fry as sort of a pancake. If the banana is still firm I would slice it in half across the middle and then each half into quarters lengthwise so you end up with eight sticks, dip them into the batter to coat them and fry.

If you do a quick google you will find many recipes and variations for banana fritters.

When I was young my Grandmother made corn fritters and served them with maple syrup. She just added corn to the basic fritter batter and fried golf ball sized pieces until they were crispy and dark brown. :yum:
