I made homemade granola last night and baked for the recipe's time. I assumed it would get more crunchy as it cooled, but when I tried some this morning, it was still pretty soft and chewy. Can I re-bake it a day later to get it more crisp? Will that negatively impact it in any way in terms of storage life, etc.?

I don't know for sure, but I would think another bake would only improve it. If it's soft, then there's still moisture in it, a requirement for spoilage. Drying it more would extend the storage life.

I would bake it some more because in my kitchen I'm the boss. Actually, I think if there is moisture in the granola, the storage life would be shortened, so for sure I would give it more time in the oven.
