Canning older produce

Hey! This is only my second year of canning and I am trying to can some cherries. I already have some canned, but with a job it is hard to pick them and can them in the same day, so I am wondering if it is okay to pick cherries, or any other produce, a day or two before canning provided they are stored properly and there are no signs of rot or anything. Thanks!
 
Yes! They would be fine to can under those conditions. The cherries I can get by the lug have been picked way more than two days ago and with way less TLC.

I teach canning classes, and one of my main points is that the quality of your end product will be as good as the quality of what you started with. You've got a good start. (Jealous......)
 
Absolutely fine. I do a lot of canning, and often can things that I picked a few days before. Sometimes I prep one day day (peel, break beans, slice or dice or whatever) and can the next day.

For the first time in 5 years of cherry production, the birds got every. dang. one. of my cherries. :(

No jelly for me.
