Make Ahead Schnitzel

Hi Everyone,
I make my own pork tenderloin into schnitzel by tenderizing, salt/peppering, and doing the flour, egg and breadcrumbs before frying.

I usually do this right before dinnertime; my question is I am having guests and would like to make it. I know it's ok to cut and tenderize a day ahead, but is it ok to salt/pepper and all the rest so it will be ready to fry a day ahead?

would you like to prepare your own bread crumbs???

-Bread
-Parsley
-Garlic
-Dried Chilli Pepper
-Salt
-Black Pepper

Blend all and let them dry or you can use oven to dry...

It will be a different taste...Trust me...
 
My supermarket sells prepared foods like that, so it must be ok to make ahead of time and re-heat. I use the same rule of thumb for what meals I can freeze - if it comes in a frozen dinner then I can do the same.
