Storing baked beet chips???

My baked beet chips were so very crispy 15 minutes after they came out of the oven. I made sure they were all completely cool before I put them in ziplock bags. They were not bad after 2 days. On the fourth day, they were all rubbery and chewy. :(

Anyone knows how to prevent them from getting rubbery? I did not make too many, but I just don't eat all of them at once. I don't want to make only 10-20 chips at a time. I prefer baking them on my own over buying them at a store, because I use exact ingredients I want.... Any hope??? Thanks
 
Do you have a toaster oven? I would put them on a baking sheet and rebake them. You could also use a regular oven. Don't nuke them, as it will just sog them up. Also, wondering if wrapping them in parchment paper and foil might hold less moisture than putting them in a ziplock.
 
Did you refrigerate them? That will make them chewy. I keep them in my pantry (chips) and reheat them on a sheet pan in the oven, as has already been suggested.
