ISO The sauce for sausage sandwich

Does anyone know how to make or what is in the sauce for sausage sandwiches you get from the fairs? sorry if this is a stupid question.
 
what does the sauce taste like? what sort of consistency is it? thick or thin? this might help people to identify what you are after.
 
Hi ZoVe, agree with jpinmaryland that at least the two of us need a bit more information.

Used to go to the Italian street festivals (like Saint Gennaro's) in NYC and they used to serve sausage and pepper sandwiches (with sauteed onions) and no sauce. Boy, were they good.

Googled a bit and found some recipes that use tomato based sauces.

If you can give us a better idea of what you want I am sure there are folks here who can help.

There are no dumb questions here. Many of us learn from every post, particularly me.

I don't know ZoVe, but would probably take the sausage, put a couple of small pricks in it, toss it into a frying pan with enough water to come up to about a third to one half of the sausages and let it simmer. Would turn the sausages every so often.

When they firm up a bit, would increase the temp and let the water evaporate and the sausages brown.

Then remove sausages when done.

Would toss into the pan relatively thinly sliced onions and peppers (prefer a mixture of red and green peppers). You may need a little bit of oil to start you off.

The mixture will get a bit watery.

Would let the water get a bit reduced and then add spaghetti sauce, tomato paste, or pizza sauce (I love pizza sauce) and whatever herbs you want.

Would scrape the bottom of the pan to get all of the brown bits in the sauce.

Would let the mixture reduce until you are happy with the consistency.

Put the sausage in a roll (Italian loaf or something of that sort, the sausage can be put in as a chunk or cut into biased slices if you wish) and top with the onion-pepper mix.

A sprinkle of hot pepper flakes on top would work well.

You can put some cheese on the mixture and nuke it if you want.

Ok, I don't know what the heck I was talking about because all the recipes i looked at had no sauce with them. It was orangish red. I could be loosing my mind though. ANyway I found a recipe for fair food, Italian hot sausage sand. It was so good. Sorry for the post...
 
For an Italian sausage sandwich try 1 bell pepper, 1 medium onion and one clove garlic all sliced,sauteed in EVOO until very soft add 1tblspn tomato paste and cook another 5 minutes. per every 2 precooked sausages This not really a sauce but the mixture the sausage is smothered in..ENJOY
