Pressure cookers are great for a few things, among them dried beans. My method for black beans is to cover them with salted water and bring to a boil. Turn off the heat and let them sit for an hour. Then drain and rinse, cover them with water again, add a tsp of oil to prevent frothing and pressure cook at 15lbs for exactly 8 minutes. Quick pressure release and drain and rinse again immediately. They come out perfect every time and I think they taste much better than canned.

I use a pressure CANNER (as opposed to the pressure cooker), and canned 3 dozen cans of different kinds of beans. I keep these in the pantry. What a money saver and so handy to have on hand. Cold bean salad, check, hot bean soups, check, hummus, check, chili with beans, check. I do like them.
