Christmas 2017 menus/plans

Our plans keep fluctuating, but it appears we will have somewhere between 12 and 16 of my siblings, some of their kids, and mom (besides us 3) for Christmas dinner, with 6 or more guests staying overnight.

Our plan so far is to have my siblings bring appys and desserts. I think we have shrimp cocktail coming, and my son wants to make devilled eggs and his special cheese fricos. Also, I bought 2 large smoked whole mackerel to carve up and make a platter. And there's always a tray of olives (Castlevetranos, Kalamatas, and Cerignolas) and pickles and breadsticks/crostini.

For the entree, DW and I will make a ham, 3 grilled london broils, possibly a roast turkey, and sides. My niece also says she'll make a lasagna.

The sides will be herb roasted spuds, DW's crusty cauliflower, steamed stringbeans or asparagus, coleslaw, potato salad, Italian bread and Polish Rye.

The day after, I will be making omelettes, home fries, and sandwiches of Taylor ham, egg and cheese for breakfast.

I'm not sure what else will change over the next week, but some may stay a second night. If so, dinner will be Korean BBQ and banchan for a late lunch/ early dinner.

What are your plans, or what's on your menu for this Christmas?

I just hope I get to sit at the big table again.
 
A quiet day at home.

I will putter around my little apartment, listen to the Queen's Christmas message, fix dinner, etc...

Dinner is pretty much a repeat of last year.
Baked ham
Kielbasa
Cauliflower gratin
Maple glazed carrot coins
Cabbage salad
Pickles, olives, etc...

A few Christmas cookies and a glass of eggnog.

I will be at work, I am cooking up a ham to bring. The rest will be potluck from whatever everyone else brings.
 
We'll be at the home of Loverly's guy friend's sister and BIL. ALL of the guys are hunters, so the proteins will be various wild game. I've been told that I WILL enjoy the pheasant (tastes like chicken!) and the wild, smoked salmon. Everything else? Um...I'll try it. Elk? Moose? I believe those are on the menu, along with deer and maybe a bear. These guys are serious hunters. :ermm: Maybe I should take a ham sandwich?

I plan on making a tray of assorted dropped chocolates: dark and milk chocolate, along with that stuff called white "chocolate" for those with cocoa aversions/allergies. I plan on using walnuts, peanuts, raisins, pretzels, Nilla wafers, and Ritz minis with peanut butter for my coating victims.
 
I am not cooking the official xmas dinner. That will be done by my parents and my sister, which means it will be a ham, green-been casserole, candied sweet potatoes, and maybe some kind of steamed veggie, like broccoli and cauliflower.

I am cooking dinner Saturday, which will be Cochinita Pibil tacos, with fresh corn tortillas (from the Fiesta close to my parent's house), homemade pickled red onions, and homemade (mild) salsa. I have to go mild on the spices, because my family isn't used to food with any significant flavor.

In the end, I am pretty confident that they will like the meal. I just have to push them out of their normal routine from time-to-time. They asked me to cook Saturday's dinner, and I told them I'm not taking requests. Honestly, I think they like that about my cooking.

I like this menu because I don't have a Fiesta near me, and it is a wonderful grocery store for authentic Mexican ingredients and the best produce in town. Their meat department sucks, but I already bought the meat I'm going to use.

I also do the scrambled eggs for xmas morning. That has been my job for many years. They all like my scrambled eggs. No secret recipe, I just don't overcook them.

I like being a Swede, same menu as last year. So ham, broth for bread, ribs, brawn, boiling sausages, fried mini isterband ( we gave up on the traditional weiners, because no one likes them and went for this local sausage instead), meatballs, liver pate , potatobake, roasted Brussels sprouts , cheese and cold cuts, I think that is all.

This year we are hosting my in-laws and BIL for Christmas day. We had the big family meal this past Saturday and then one of the five siblings invites them over for the 25th. This year is our turn. :) Living 5 minutes away makes it so much easier as well.

Because we already had the big turkey, and with TB's and my food issues, this is my menu.
- turkey breast roast stuffed with gluten-free bread stuffing
- cornstarch gravy
- little potatoes, boiled
- sliced ham (MIL's contribution)
- glazed carrots (coconut sugar, palm oil margarine, and homemade mustard)
- green salad (BIL's contribution)

Dessert has not been decided on but will probably be fruit based.

Ambrosia Salad

2 (20 oz.) cans pineapple chunks, drained
2 (15 oz.) cans mandarin oranges, drained
2 (10 oz.) jars maraschino cherries, drained
1 (14 oz.) bag coconut flakes
5 oz. (1/2 bag) mini marshmallows
4 oz. sour cream
16 oz. Cool Whip
 
My DD wanted to do a multi course meal for Christmas this year. So we will have several course with SMALL portions of foods. Here is the tentative menu for Christmas eve and Christmas day. Things may change last minute.

Christmas Eve is our small family dinner. Ex-Mrs K and I are hosting it at my house this year and having our daughter and her long-time boyfriend over. The menu is:

  • Appetizer: Escargot and Champagne. We all chip in putting this together.
  • Soup: Velouté de Châtaignes (cream of chestnut)
  • Entrée: Beef Tenderloin Filet with Demi Glace, Mushrooms, and Roasted Vegetable Medley. I was able to get a prime cut from Costco this year. :chef:
  • Salad: To be provided by Ex-MK
  • Dessert: To be provided by DD

Christmas Day dinner is a more low key affair. My ex-in-laws are hosting it. I'm bringing two sous vide Sirloin Tip Roasts. Sides and accompaniments are provided by other attendees. For some reason, I've become the designated beef cooker. They bought it; I'm cooking it.

While it's nice of my former in-laws to include me, truth be told, I wonder sometimes if they just invite me for my food. :LOL:
