Shortening substitute?

I am making some peanut butter truffles and it calls for shortening for the coating, is there anything that I can use instead of shortening? I hear that it adds an odd flavor.

Ok, I have a lemon cupcake recipe that I need to cut in half, but it calls for 3 eggs. How would I go about doing this?

Thanks for the info!! I did let it get too hot once the cheese was mixed in, but now I know what to so it doesn't happen again!!

Broccoli and Cheese Soup

Ok, so I cooked a broccoli and cheese soup (also added potatoes and chicken) and it was really yummy! Except some of the cheese turned clumpy. I don't know what I could do for this not to happen...
