The only way I can eat salmon is either smoked (lox or nova) or cured (gravlax). Just can't eat it prepared any other way.

I've never heard of using "coarse masa harina" for tamale dough. Most grocery stores in my area carry Manteca. Leaf lard is much harder to find.

We've made pasta with all purpose flour for years. We recently tried "00" and really couldn't tell any significant difference. For stuffed/filled pasta, we prefer a combo of all purpose and semolina....
