We had a supper, mostly pulled from the freezer. The meatloaf and the mashed potatoes were experiments in freezing and worked well. The rødkål was in the fridge, because it keeps for a long time without freezing.

I made rolls in my cast iron pan today. I had big plans to do a yummy tomato sauce with the spaghetti squash I roasted yesterday but after one roll...I'm done. Ken and I are just going to snuggle in with the pets and some tea. Easiest dinner ever!

I winged it. Scallops in a Thai coconut red curry sauce over rice. Judy told me to write down whatever I did because she wants me to make it again.

Decided to drive into town for some Arby's. The dog and cats had a roast beef sandwich without the bun, I had a Smokehouse Brisket, without the bun.

Once again my air fryer rescued my lazy self.

I did frozen Teriyaki shrimp in it. Put together a quick noodle/veggie bowl with Chinese noodles I keep in the freezer.

Earlier I baked sugar cookies, so those w/milk was dessert.

Disclaimer: My experiences may not be as someone else might think correct.. Life goes on..
