National Arbor Day is celebrated on the last Friday in April. Did anyone plant a tree today?

Tonight's dinner will be maple glazed salmon, garlicky mashed redskin potatoes, and asparagus.

SC found boneless pork shoulder slices (aka farmers ribs) for $1.00 a lb!! :shock:
He bought some for neighbors too, because that's the kind of guy hie is.

We're having pulled pork sandwiches tonight with coleslaw on the top.

Vinegar based sauce for us.
 
I was inspired by the discussion earlier in the week so tonight's dinner will be fried rice with Chinese boneless spare ribs, pea pods, carrots, shiitake mushrooms, onion and whatever else is in the fridge.

I made eggy ham and cheese sandwiches for breakfast, AKA Egg McMuffins. We'll just graze through leftovers tonight in hopes of opening up some space in the refrigerator. Poor fridge is so full I can't even grocery shop this week. I think. :whistling:
 
I went deep-freezer diving this morning after breakfast,
and came up with what I think is the last Rib Roast Steak leftover
from New Years here with Mom.
Well, at least that's what my dry-erase board says, but DH has
been accidentally brushing up against it and ERASING away
my "table of contents" board! :mad:

Anywhos, it'll be Rib Roast Steak, roasted Yukon Gold Baby Potatoes and Gingered Carrots.

I'm thinking that we'll get to that Quad-Chocolate Cake with Vanilla Ice Cream for dessert later ;)
 
And this was for late lunch today
got some nice fresh shishito peppers from the farmers market, wild mushrooms, and some ham :)

and made one of my favorite flat bread with mushrooms, ham and cheese*

Carolina Style BBQ Sauce

  • 1 cup apple cider vinegar
  • 1/2 cup white wine vinegar
  • 2 tablespoons dark brown sugar
  • 1 tablespoon ketchup
  • ½ tsp cayenne pepper
  • 1 teaspoon of red pepper flakes
  • 1 teaspoon of ground pepper
  • 1 teaspoon salt
Bring to a boil and store leftovers in a jar in the fridge.
Best if made at least the day before needed for pulled pork sandwiches.


By the way Roman, I love that burger idea..
 
DH is playing golf but not planning to go to dinner with the guys tonight. I'm too tired to make dinner, so he's going to pick up a pizza from our local pizza joint on his way home.

Dinner is still in the oven, I could easily eat a spoonful of each of your dinners. Everything looks good

Dinner is oven roasted chicken pieces, carrots and on top of the stove is mashed potatoes and corn.
 
Chicken on rose cream sauce, roasted potatoes and..... corn on the cob? Was the only fresh veggie in the fridge...

I did not plant a tree, but I have a handful of oak tree saplings from acorns around my oak tre. I cant let them grow where they are, but might transplant a couple into pots to plant next year, somewhere. I'd love to give them to a school for kids to raise and plant, but have no idea how to make that happen. People in North Texas celebrate Earth Day by buying a bigger pickup or SUV. Trees... meh.

As for dinner, it looks like IE had the day off, since he did two cooks in one day. I did not, and will probably graze on leftovers tonight. I'm thinking of making some tacos from last night's grilled chicken.

I have a nice rack of baby backs I bought yesterday, Kroger's Simple Choice meat, which is all-natural and pretty good meat. So, I'm already planning to smoke them on the Weber Kettle tomorrow.

Contact your local Cooperative Extension office. They often have horticultural programs that involve children, either in the schools or at the offices. They will probably at least have contact information.

Italian Sweet Sausage, multi colored frying peppers, onions, burgundy wine and crushed tomatoes. Italian bread on the side.
