Cooking for more than one meal...

My husband is working 10 hours a day, 6 days a week, and that's kinda hard on a 61 year old man. I'm stove up, and do well to cook 2 meals a week.
So...when we do cook, we like to cook enough for several meals.

Last Sunday night, Kim cooked 4 chicken breasts, 6 Johnsonville brats and 6 heads of garlic on the grill, and I caramelized some onions and sweet red and green peppers. We had on hand a couple of different bagged salad mixes, assorted pickled things, and a pretty decent assortment of cheeses and breads.
For four nights in a row, we had beautiful sandwiches with assorted accompaniments, including fresh asparagus.
Our's is coming on right now, and we are eating it almost every night.

I wonder if any of you all ever cook for more than one meal. Any ideas or hints?
 
:) I do all the the time but it,s a large quantity rather than an assortment,like spaghetti sauce which I freeze in small containers.
