Monday nite eats! 4/10

I'll be having Mexican with a friend tonight in Orange County Cal. I've been before and this place is very good and known for their authentic flavor.

Anyone else eatin tonight or is it just me?:ohmy:
 
:) We are having tostadas made with my slow cooked pinto beans with shredded beef,cheese,lettuce and salsa .The tostadas I cook myself in canola oil.
 
tacos here, too, and cream cheese stuffed jalepenos wrapped in bacon and kadesma's bacon wrapped apricots.
 
It's curry night here. I'm thinking chicken thighs. I'm roasting the bones from the thighs for stock right now. steamed rice with star anise infused into it. ( I always add star anise when I'm steaming rice, adds a fresh scent to it)
And wilted spinich with fresh ginger.
 
We're on our second day of Spicy Fish Stew

...along with a salad I'm hooked on right now:

  • Nakano's balsamic/rice vinegar dressing/marinade (I use it like a vinegar for proportion purposes)
  • A dollop of Dijon Mustard
  • fresh grated garlic (not too much)
  • white pepper
  • and of course olive oil - add to your liking, sometimes I like it a bit more vinegary and sometimes I want a smoother olive oil taste
  • there is quite a bit of salt already in the balsamic/rice vinegar so I don't add more

  • Baby romaine
  • sliced grape tomatoes
  • cubed fresh mozzarella
  • sliced kirby cukes (the pickling kind)
  • slivered red onion
  • slivered almonds
