Lightly fried pork loin medalions with a garlic infused pineapple sauce. Zuchini and mushrooms sauteed in lemon, garlic, olive oil and a little butter. Mushrooms stuffed with garlic and black pepper goat chevre (sp?) cheese. I guess it's apparent that we went to a garlic festival this weekend. :)
 
last night i grilled some chicken breasts while dw made spaghetti.

not much of a dinner, more like a late lunch. so around 10, i ran out for chinese/mexican take out. :pig:

steak and cheese enchiladas with guac and mexican rice, chicken and broccoli in garlic sauce, and veggie lo mein.
 
I roasted a lemon & fresh herb stuffed chicken on the rotisserie last night & served it with oven-roasted vegetables.

Cut the chicken up in quarters with poultry shears, & we each had a quarter last night. The remaining two quarters I'll shred up & use for chicken enchiladas later in the week. Gotta love the versatility & meal-stretching qualities of a whole chicken! :)
