So far, Covid Cooking looks a lot like everyday cooking - so far. If Himself has to take over...

Tonight we had pork chops with apples and shallots in a Calvados sauce, sauteed zucchini, and Carolina long grain and wild rice. What was your dinner?

I made the recipe discussed on the asparagus thread. While eating dinner watching the evening news, I lost my appetite. We won't be watching the news while eating dinner from now on.
 
We had a small pork roast rubbed with a mix of garlic, rosemary, EVOO, and tomato paste. I put half cooked potato wedges in the pan with the roast. Then I stuck it in the oven and made a salad of green crisp lettuce, a few leaves of sorrel, mustard greens, and endive, and finally a bit of thinly sliced red onion. Tossed the salad with some homemade vinaigrette. Very satisfying supper.

Beef bourguignon pot pie. I'd add some chunks of carrots next time, but it came out pretty darn good.
