Almost dinner time out west.

I've been cooking Kalua pork in my Nesco roaster, and we're having spinach salad with mushrooms and onion, and some Jasmine rice for the SC
 
Sounds delicious, Kay. :yum: I had a hankerin' for breakfast for dinner, so it was pancakes, 2 fried eggs, bacon, and watermelon on the side. :)
 
I had some redskin potatoes to use up, so it was smashed potatoes with my Penzey's granulated garlic that arrived today (yay!) and some cheddar.
 
Avocado, Shrimp & broccoli salad w/ wasabi mayo dressing.

I had a piece of leftover chicken schnitzel, so I repurposed it and made chicken tonkatsu. I reheated and recrisped the chicken in the toaster oven and reheated leftover rice with a sprinkle of five-spice powder.

I also pickled some cucumber and carrot in rice vinegar with sesame oil. Served it over shredded lettuce with tonkatsu sauce and half of a Mandarin orange (I squeezed the other half into the sauce).
