Wow, it is hard to believe the month has gone by so fast!

I finally made it to the doctor yesterday - DH had no problems driving in the snow and most other people stayed off the roads! It is about a 45 minute drive in normal weather and actually only took us an extra 15 minutes each way. Anyway, my left shoulder and right knee are officially the new targets of my new "friend", osteo-arthritis. I am scheduled to go see a specialist on Tuesday for possible cortisone shots in both areas. And, I am to rest as much as possible until then.:(

So, DH, again with my coaching from the couch, made a big pot of chili (we are talking 10 litres!) last night and the guys can help themselves tonight. I will take one of my allowed times up to through together biscuits that can be thrown in the oven just before dinner.

Now I just need to figure out other easy meals like that for 3 hungry hard-working men! At least I have lots of time to do it.

What's everyone else doing?
 
Chicken breasts topped with lobster chunks & Havarti cheese and covered in a creamy leek & mushroom cheese sauce, grated Parmesan cheese sprinkled on the top. Probably have broccoli and a nice salad to go with it.
 
Today is our meatless day, so we'll have poached eggs in tomato sauce served over toasted N.Y. Times bread, sprinkled with Parmesan cheese curls. Italian green beans on the side and cinnamon streusel cake for dessert.

Yeah, where DID January go?
 
LEFTOVER NIGHT!!!!!!!
Red Beans and rice or Potato soup.
But as usual hanging out here is making me re-think that, everything else sounds so yummy!
 
I have pork chops thawing. We'll have those just fried in olive oil with salt and pepper, if I get home in time. If it's late or I'm grumpy it'll be leftovers again.

I'm glad January's over, means we're just that much closer to Spring.

I'm making Mexican Chicken & pasta casserole. It's cubed, seared chicken breast, tossed with pasta (ziti or penne), salsa, shredded cheddar cheese, Italian dressing, cayene & sour cream, and all baked together in the oven in a casserole dish. Its very easy to make and filling.
 
Ever been caught skipping school? and then they put you "on report" with this paper that has to be signed by the teacher at the end of each lesson?

well my Wife is on a Similar things and now has to keep a Food diary for a week to be assessed on Friday. (yes she`s been a naught girl and gained some weight!).

BUT... I want a Take-away tonight, it`s been Months since I had one!

so I have no idea What to do! (without feeling bad).
 
Made pork loin earlier this week. Think I'll doctor up some spicy BBQ sauce asian-style, cut up the pork loin and toss it with sauce and broccoli over white rice. Just like Chinese food delivery man brings! Garnish with cold cukes, peanuts and bean sprouts
 
Tonight is going to be good.

The ONE thing I missed living in Hawaii was good Indian food, there was a couple of places, but not good and very pricey!

SO, now that we are back(and almost settled) we are going for Indian at our local place. Food is always GREAT and we can eat ourselves silly for like $30!

Can't wait!
 
I don't have a name for it but it is zucchini, onions, peppers, garlic, tomatoes and finish with egg and grated cheese. I may add pasta to it for dh but I'll just eat mine with crusty bread. We had this a lot when I was a kid (yup that long ago!)
 
We are going to my favorite Mediterranean restaurant, Olivia's. We always start with the Moroccan platter...babaganoush, couscous, tomato/pepper dip, spiced carrots...then some lebane with freshly made pitas. For my entree I think I'm going to order mousaka unless they have a yummy special....and for dessert baklava.:)
 
It is now 6:20pm and I haven't got a clue!!!!!!!!!!!! I hate nights like this, with a dh and two hungry sons.:(
 
We had an antipasto type salad, beets,artichoke quarters,slices of provolone,salami,proscuitto,mozzarella,two types of lettuce, shaved red onion evoo and red wine vinegar, then we had a bbq'd chicken pizza with carmelized onions, mushrooms,jack cheese it was so good..dessert will be a little later just some pb cookies drizzled with chocolate and some vanilla ice cream..
