It will be homemade meat sauce and pasta and a salad.

I am using leftovers.... So, it's either going to be a stuffed bell pepper dish or a beef pot pie. It's relatively cool here (60 F) and turning on the oven won't be an issue.

I took sauce and meat balls out of the freezer. It will either be Spaghetti with Meat Balls and Garlic Bread or Meat Ball Sub. Fruit, Pineapple Upside Down Cake.

Saturday our farmers market had lovely first-of-the-season Poblano peppers, so I couldn't resist picking up a few. Made one of our favorite vegetarian Mexican meals out of them last night - my own "Breezy Baked Stuffed Poblano Peppers". Served on a bed of Knorr's Mexican Rice mix with a big green farmers market salad on the side. Recipe WITH PICS at the link below.

I didn't make a casserole or pot pie. I had the same idea as the night before, only I added baby carrots and celery and served over rice. On the side, slice orange.
