We had meatloaf sandwiches and finished off the rest of the rice salad. Then we had some of the strawberry ice cream we made yesterday.
 
Pan roasted chicken thighs, rice pilaf and peas. (SO has to have peas to mix into her rice).

I don't know whether others have this problem, but I have a freezer that I am dubbing "The Black Hole." I find great sales, buy meats and they disappear into the Black Hole. I'm working to shopping the Black Hole PRIOR to going to the supermarket or whatever.

A few days ago, I roasted a turkey breast. After making turkey sandwiches, roast turkey and mashed potatoes, etc., I made a casserole out of the remains of the turkey meat. Added string beans and some cranberry sauce. Pretty tasty!

I went all out - but Himself had to go outside to grill the dinner. [emoji38] First we had fancy salads: Boston and romaine lettuces topped with black and salad olives, bacon, hard cooked eggs, shredded mozzarella, and little Cherub tomatoes. The main event was grilled colossal shrimp with a Thai coconut seasoning over lime-parsley Jasmine rice, steamed broccoli, and fresh corn off the cob.

Jeannie took me out for FD breakfast.:)

Later, we had a couple of dinner options but, we decided to go out for Braum's ice cream Sunday's instead. :yum:

I stayed out of the kitchen all day.

I was exhausted Sunday after DH's brother and his family visited for a while Saturday. Totally ran out of spoons and even had to borrow a couple from the next day. So we changed plans and went out to dinner Sunday instead of Monday.

It was a seafood restaurant on the river - so nice. We shared crab dip to start, then DH and his dad had crab cakes and I had fried shrimp and hush puppies with mashed potatoes and salad. I ate all the mash and none of the salad [emoji16] But I ate it, along with a few leftover shrimp, for breakfast this morning.
