Asparagas would stand up nicely to the salmon and cheese rice sounds good too! I think I posted the cheese rice recipe - if you want it just let me know it's very simple!

Today's dinner will be orange roughy. Hubby is on limited carbs, and has a taste for dinner rolls for a change. I have a glut of limes (the result of too much partying), so will use lime juice, capers, and hot peppers to deglaze the pan. I'm going to make up some brussels sprouts (his fave veggie) as a side dish. Normally I'd go with a lot of the above suggestions, depending on the fish prep. Wild and long grain rice in combo is a classic, though. Remember that wild rice takes longer to cook, and I like them cooked in chicken stock with lots of chopped fresh herbs. Couscous is so easy and quick, you can't go wrong. But with your marinade I love the soba noodles idea!
