SO is having a serving of the turkey noodle soup I made last week. I'm up for a quick pasta Alfredo.

Will probably have some strawberries and kefir cheese for a late dessert.

It's zupa weather, so I made a vat of mushroom barley soup. I fished two rolls from the freezer and turned them into cheesy garlic bread.

Boneless fried chicken thighs, mushroom parsley gravy with mashed spuds and spiced spiralized butter zucchini.

Leftovers. I got hungry again fairly soon, so I made up a spread called "Northern Lights". Cream cheese, chopped walnuts, and chopped olives. I had some on a couple of slices of Wasa whole grain, crisp rye.

I like the looks of all that! Recently watched Alton Brown deboning thighs with scissors. Next time I bring home thighs I'm gonna do that.

Thank you. That chicken dish sounds yummy. I don't know if I'll ever try making it, since the hubster doesn't like chicken thigh meat or olives.

I'm always looking for new ways with thighs and this sounds like a real keeper. It's a brilliant yet simple technique I had never thought about before now.
