Friday, 5/15 - Cookin' Anything?

Roasted 'Buffalo' Chicken Thighs (there were two , wouldn't fit on the late, lol)
Mashed Idaho Spuds with Creamed Corn 'Gravy', Lima Beans, Salad with Egg....

I am cooking a couple of burgers sous vide for tonight's dinner. We'll dress them with bacon, cheese, onion and tomato. Tater tots will provide the much needed carbs.

LT, I've tried your cream corn for gravy. I got one vote and one no vote. Will make this when I'm at my house. I think a little green onion and it would be perfect.

I was looking up how to use a little bit of yesterday's chicken. Not enough for sammies or salads. Hit on a Spanish tortilla, Said no, I don't think that's quite right. Too many eggs. Ah, a frittata, still more eggs. If I wanted to make an omelet, I'd make scrambled eggs.

Anyway, had to make more not-leftovers from scratch to fill up the pan. Fried sliced potatoes, onions, grate some Jarlsberg swiss and parm, steam some green beans, chop and seed a jalapeno, crushed oregano. Into a pan with some shredded chicken 1 1/2 thigh meat and 4 eggs only. Into the oven to finish. No danger to the public going this route. Handful of lettuce salad. Tasty.

I got some nice tomatoes at the grocery, and needing a quick meal after playing bridge online, I made BLT's with the bacon I cooked yesterday. Chocolate cake for dessert.

A suggestion for another time: I sometimes use leftover chicken to make quesadillas. I shred or cube them small, mix with salsa and add cheese when I put them together.

We generally eat rather late, but I'm ready to start DH will be grilling tonight, once he's done with his exercise routine. I have chicken thighs seasoned with Penzeys BBQ 3000 seasoning ready in the fridge and two ears of corn shucked and ready for the grill. When he starts grilling, I'll make salads.

Yes, this is too right. And a favorite they are. I more or less wanted to play around in the kitchen this afternoon.

I was thinking about supper and couldn't quite decide what I wanted to cook. DH said, "I've been craving pizza, so if you don't want to cook, ..." Sounded pretty good. Then I got a migraine and it sounded really good. DH got a Luna special pizza and I got the two stick souvlaki platter. That was tasty. But, now I'm wishing I had ordered some baklava for dessert.

Didn't cook Friday..

I was notified by the manager of our favorite steak house that they were having a soft re-opening Friday evening.

Immediately made a reservation and was not disappointed.. We opted for "Dinner for Two" and were served a wonderfully grilled to perfection, 2lb Porterhouse steak w/sides.. I barely touched the sides as my reason for going was a perfect 2" thick steak.. With both of us eating, we still brought home steak for Saturday sandwiches..
We also brought home their wonderful bread pudding dessert..

For those concerned with dine in, the restaurant was impeccably clean and very strict safeguards were adhered to..

We were "busy" last night so I didn't check in here. I'm going to make another post about why we were busy last night.
